Low Carb Ham Egg Fried Cauliflower Rice | Dietplan-101
Ingredients:
- 13.5 oz (380 g) cauliflower (cut into small pieces)
- 2 eggs
- 1 medium onion (diced)
- 5 cloves garlic (chopped)
- 2 oz (60 g) red bell pepper (diced)
- 3.5 oz (100 g) ham (diced)
- salt & pepper (to taste)
- 1 oz (30 g) green onion (sliced)
Instructions:
1 Put cauliflower pieces in food processor and chop until it has the texture of coarse grain.
2 Season eggs with salt and pepper to taste and beat lightly.
3 Preheat cooking wok, then add in some cooking oil, pour in beaten eggs, swirl the pan to make a thin layer. Remove from pan when both sides are cooked, then cut the omelet into thin strips.
4 Preheat cooking wok, then add in some cooking oil, add in onion, garlic and bell pepper, cook for 1 minute.
5 Add in ham, season to taste with pepper.
6 Add in cauliflower rice, season to taste with salt, cook until tender.
7 Add in green onion and omelet strips, mix well.
