Soy flour is a low-carb flour that is always used in low-carb baking and cooking. You can make your own soy flour from your kitchen easily. What you need are only soybean, grinder, and sifter. You can use either the Wet Heat method or the Dry Heat method to cook and dry the soybean before grinding it into soy flour.

How to make soy flour

Ingredients:

  • 1 cup soybean (raw)
  • 5 cups water
  • pinch of baking soda (for the Wet Heat Method)

Instructions: 

Wet Heat Method:

  • Bring water to a boil in a saucepan, and add baking soda and soybean.
  • Bring to the boil again, reduce heat to low, cover and simmer for 25 minutes.
  • Preheat the oven to 230°F/110°C (or the lowest temperature of your oven).
  • After 25 minutes, drain and rinse the blanched soybean in running water.
  • Spread the soybean in a single layer on a baking tray, then bake in the preheated oven for 1 hour 20 minutes, or until dry.
  • When the soybean is completely dry, remove it from the oven and set it aside to cool.

Dry Heat Method:

  • Add water to soybean and soak for 8 hours.
  • Preheat the oven to 350°F/180°C.
  • Drain the soybean and spread in a single layer on a baking tray.
  • Bake in the preheated oven for 25 minutes, then REDUCE heat to 230°F/110°C and continue baking until dry (about 25 minutes).
  • When the soybean is completely dry, remove it from the oven and set it aside to cool.

Grinding Soybean into Soy Flour:

When the baked soybean has cooled down, a process in batches into soy flour using a grinder. After grinding, sieve the ground soybean with a sifter. Process the leftover in the grinder and sieve again. Sieve the soy flour again using a finer sifter, process the leftover, and sieve again. After several grinding and sieving, it yields about 2 1/4 cups of soy flour (from 2 cups of raw soybean).
