Gluten-Free Amaranth Pasta Recipe

Ingredients
 
 

  • 8 oz amaranth flour
  • 4 1/2 oz tapioca flour
  • 1 egg
  • 1 tbsp walnut oil
  • 1 tbsps water 1-2 tbsps water, adjust accordingly

Instructions
 

  • Sift both flours into a large mixing bowl and make a well in the center.
  • Put the remaining ingredients in the center and mix well to form a dough.
  • Lightly flour a clean surface and knead the dough until smooth and elastic.
  • Cover with cling film and rest for 20 minutes.
  • Roll the dough out thinly and form it into your desired pasta shape. If using pasta maker, feed dough trough individually. If rolling by hand, cut the dough into small pieces first before rolling each one out individually on a floured surface.
  • Cook pasta boiling water until al dente, or about 3-4 minutes.

Notes

You can also make spaghetti or fettuccine instead if desired!
